3 Ingredient Low Carb Coconut Bars

I’ve had this COCONUT CRACK BAR RECIPE from The Big Man’s World on my PINTEREST board for so long and never got a chance to make it. I don’t know why when it legit only consists of 3 ingredients. Ha!
I love coconut so I was excited to finally try this. Well, the verdict is… it’s delicious!! Plus, it’s a low carb / Keto / no bake recipe (here are the NUTRITION FACTS)! It’s a perfect snack or dessert!
Here’s the recipe:
INGREDIENTS (makes 20 bars)
3 cups shredded UNSWEETENED coconut flakes (I only had coconut flakes so I just used that but what’s suggested is shredded coconut flakes and/or fine coconut flakes)
1 cup coconut oil (melted)
1/4 cup MONK FRUIT SWEETENED MAPLE SYRUP

INSTRUCTIONS
-Line 8×8 pan with parchment paper; set aside
-Pour shredded coconut flakes in a large bowl. Add melted coconut oil and monk fruit sweetened maple syrup. Mix ingredients.

-Pour the mixture in the lined pan. Spread and flatten evenly.

-Refrigerate until firm. Cut in bars and enjoy!
