Low Carb Quesadillas
I wanted to share this low carb recipe that I ended up trying out! I had it for lunch this week, and it’s a PINTEREST win in my book! This recipe is from DELISH with 1 modification of what I already had at home. 😉
INGREDIENTS:
1 tbsp. extra-virgin olive oil
1 bell pepper, sliced
1/2 yellow onion, sliced
1/2 tsp. chili powder
Kosher salt
Freshly ground black pepper
3 c. shredded Monterey Jack and 3 c. shredded cheddar (or if you’re like me…I already had a bag of Mexican Style cheese blend so did 6 cups of that)
4 c. shredded chicken
1 avocado, thinly sliced
Sour cream, for serving
DIRECTIONS:
1- Preheat oven to 400 degrees
2- Add parchment paper to baking pan
3- Slice green peppers and onion
4- Add oil to pan. Heat on medium-high setting.
5- Add pepper, onion, chili powder, salt, and pepper. Cook until soft
6- Add cheese to parchment paper and spread about the size of a regular tortilla.
7- Bake until golden around edges (8 minutes)
8- I grabbed a paper towel to get excess oil from “tortilla.” Then add onion/pepper mixture, chicken, and avocado. Fold one side so is covering the filling.
9- Put back in oven for another 3 min.
10- Cut in quarters and add sour cream.
Enjoy!! I thought it was delicious! 🙂 The cheese made for a great “tortilla!”
