Zucchini Snacks!
With the Keto challenge, I wanted something healthy to snack on! I found this BAKED PARMESAN ZUCCHINI RECIPE on PINTEREST . I did both zucchini strips and “chips” to see which one I liked better.
INGREDIENTS:
2 zucchinis (recipe calls for 4 if you just do quarter lengthwise cuts)
1/2 cup freshly grated Parmesan
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
2 tablespoons olive oil
1.Preheat oven to 350 degrees F
2.Coat a cooling rack with nonstick spray and place on a baking sheet; set aside. (I didn’t place on a cooling rack in these pics, but I did the next batch and it makes a difference. Definitely, place on a cooling rack!)
3.Cut zucchini… I cut one zucchini lengthwise to get 4 quarter strips and the other zucchini to get round shapes
4.Combine Parmesan, thyme, oregano, basil, garlic powder, salt & pepper, to taste
5.Drizzle olive oil (I had Roasted Garlic and used that! YUM!)
6.Top with Parmesan mixture.
7.Bake for 15 min. Broil 2-3 minutes until golden brown.
OMG…These were so yummy! Both were great, but I actually preferred the “chips.” It was just easier to snack on, and I got more of the parmesan in every bite!
