Low Carb Tacos
I’m already 5 days in on this challenge and feeling great! With dance recital last week, I got behind on these blog posts! Let’s start with day 2. The kids requested TACOS! Our family LOVES tacos! One thing I want to do with this challenge is still be able to eat meals I love but make it more Keto friendly.
First up, toppings! Blaine chopped up some cilantro, onions, and tomatoes. Thankfully, we still had jalapeños from the night before. The kids are perfectly content with only cheese as a topping for their tacos so these veggies are mainly for Blaine and myself.
Instead of flour or corn tortillas, I used cheese as my taco shell! It was actually super easy to make! Each taco shell was about 1/4 cup of cheese. I did these on the stove but you can also bake them in the oven.
Before I get into it, I do want to mention that I’m all about switching to safer items not only skincare and makeup. One of the swaps I made was using safer cookware. Sorry, I don’t want our family eating nasty chemicals from our pots and pans. I found these nonstick pans and are so happy with them! Click HERE for these specific ones.
Once it got golden brown on the edges, I flipped the cheese over.
Time to put the tacos together!
I HAD to add sour cream. It’s a must for tacos. 😉 Omg… these tacos were sooooo good!
I also wanted to mention another safer swap item! Glass storage containers instead of plastic! Click HERE for these Pyrex containers! It came as a 20 piece set with various sizes of containers. I know in this pic these containers look big, but it’s actually small containers which is perfect to store the toppings we had left over to use in eggs the following morning!
